Aguilar, the longtime operator of Maricopa’s Raspados Locos food truck, started selling her gigantic, fun-flavored desserts inside three businesses on the main strip in January. Her newest cookie stands are inside Joe’s Barber Shop and Mr. E Comics.
“My cookies were going viral all over town … before you know it, I was sold out,” said Aguilar, 31. With demand heating up faster than her oven, the Hidden Valley businesswoman has decided to debut a popup concept at the Copa Farmers Market this Sunday.
Every cookie she makes is a bit different, and the ingredients make a difference. In one cookie, she substitutes regular brown sugar with light brown sugar. Everything matters. Ingredient ratios and dough hydration all play a role in baking a chewy, thick and flavorful cookie like Grandma made.
Better yet, the menu rotates with the seasons — this month’s “Feelin’ Lucky” cookie is topped with magically delicious mini marshmallows. The familiar cereal flavor might elicit a glass of milk or coffee now that you’re grown up.
The pro baker crafted her recipe collection over time.
“I tweak a little bit of the recipes that I like, and I also purchase recipes from other cookie bakers,” Aguilar said.
The craft is a passion of love. A love she turned into a burgeoning business.
“I want to be able to stay at home as well with my kids and manage my own schedule, and I feel like baking cookies is fun, too,” she said.
Aguilar offers pickup service from her home bakery near Farrell and Hidden Valley Roads. She delivers the goods in Maricopa through an online order portal, Facebook or Instagram messages. She said she plans to begin offering out-of-city shipping this year.

Her site offers a variety, including a traditional chocolate chip recipe that sports a blend of milk and dark chocolate for the perfect flavor of every bite. You might start with a mature Matchadamia, a nutty matcha-themed cookie, or a cookie packed with butterscotch chips and Biscoff.
As for the Cactus Cookie Co. name, Aguilar says: “I chose a name that resembles my Mexican roots, with vibrant color schemes, Mexican-themed designs and a cactus to resemble our desert plant landscape — and because I love cacti.
“The city of Maricopa helped me choose this name by highest vote on our local Maricopa AZ 85138 Facebook page.”
Aguilar says her kids love to watch her bake or help out by pulling ingredients and helping prep. With any help, the recipes will be a tradition in her household and a Maricopa staple.

The dust storm warning and the blowing dust advisory that were issued by the National Weather Service have expired.
PHOENIX — Did you see dust blowing through the skies over Arizona? You're not alone, as the National Weather Service in Phoenix issued a dust storm warning for Pinal County and a blowing dust advisory for parts of Maricopa County, but both have since expired.

The dust storm warning was issued at 2:40 p.m. due to "numerous dust channels" being seen near Arizona City, about nine miles southeast of Casa Grande, according to the National Weather Service. It was in effect until 4:15 p.m. on Saturday.
The NWS said that the storm caused visibility to be less than a quarter mile and it had winds that were blowing faster than 30 miles per hour.
NWS said the storm affected Interstate 10 between mile markers 189 and 204, I-8 between mile markers 167 and 178 and State Route 87 between mile markers 124 and 131 along with the towns of La Palma, Toltec, Arizona City, Arizola, Randolph, Casa Grande and Coolidge.
NWS reminds drivers to not drive through a dust storm and to pull over, turn their lights off and take their foot off the brake until the storm passes.
NWS said the blowing dust advisory was issued for areas including the Sonoran Desert National Monument, South Mountain, Ahwatukee, the southeast Valley, Queen Creek, northwest Pinal County and west Pinal County. The advisory was in effect until 6 p.m. on Saturday.
NWS said this advisory caused visibility to drop to anywhere from a quarter-mile to one mile and that it caused hazardous driving conditions.
